Lazy Donut / Doughnut

Note 2 : Second try is taken from youtube <https://youtu.be/spgsx9I51V0?si=zCm-Qi3USH1Pkkwy>. This dough is super soft 🤤. Dreamy.

Ingredients
75gm warm water
1 tbsp condensed milk
1 tbsp sugar
1/4 tbsp of instant dry yeast (1 tbsp = 3 tsp, 1/4 tbsp = 3/4 tsp = 1/4 + 1/4 + 1/4 or 1/2 + 1/4 tsp)

140gm all purpose flour (used : bread flour)
1/2 tsp baking powder
1/4 tsp salt
15gm margarine

Yield : 7-8 doughnuts

1. Combine warm water, condensed milk, and sugar until well dissolved. Pour in yeast and stir to fully combine. Let yeast bloom for 10 minutes before use.
2. Combine flour, baking powder and salt. Mix well.
3. Add in yeast mixture and mix to combine until dough is scraggly. If using a breadmaker, might only take a few seconds.
4. Add in margarine when dough is still scraggly. Knead dough until fully combined into a ball, soft and not sticking to the hand. If using a breadmaker, set the dough to knead for 30 minutes.
5. Rest the dough in a bowl at room temperature. Might take 1 hour to rise more than double its original size.
6. After 1 hour, separate the dough into 7-8 small portion, each weighing around 30-40gm.
7. Fold the dough into a ball. Flatten it a little and cut the hole in the middle to shape into a doughnut. You may use a small piping nozzle for this (or whatever you can find).
8. Rest the doughnut onto a pan lined with baking paper. Wait until 1 hour or more for the doughnut to rise / proof for the second time.
9. Fry doughnut in enough oil at medium heat. Only flip the doughnut once per each side to minimize oil absorption.
10. After finish frying it, rest doughnut for a while to toss remaining oil. Coat it with powdered sugar and serve.

Note 1 : Adapted from NYTimes Donut Recipe and to try this next <https://cookpad.com/my/recipes/9787555-donat-gebu>.

Ingredients:
1/2 + 1/4 cups of milk
1 + 1/8 tbsp or 3.5gm of instant yeast
1/8 cup sugar
1/2 tsp salt
1/4 cup or 60gm butter
1 egg
2 cups of flour

Steps:
1. Mix yeast with warm milk and sugar until it blooms. May take around 5 minutes. Set aside.
2. Melt butter and salt in a microwave. Set aside.
3. Whisk egg until airy and blooming. Mix yeast mixture, melted butter and egg in the breadmaker. Mix until well combined.
4. Add in flour in batches. Let the breadmaker knead the dough until it is no longer sticking to the wall. Add little flour if dough is a little too wet.
5. Spread oil or butter all over the dough resting bowl. Let the dough rest and proof for at least an hour. Cover with cloth or another bowl.
6. After an hour, spread the dough on a flat surface. Use a glass or donut mould to cut out donut shape. If not, you can also roll the dough into small ball shapes, flatten it. Set aside for a second proofing. It may rest for at least 15 minutes.
7. After second proofing is over, make holes in the donut and fry them under medium to low heat. Flip them after a few seconds to preserve the shape. Take them out of the heat when they are light golden brown.
8. Dust with sugar. Serve hot. If want to dip then in chocolate, they need to cool down first.
