Weird Butter Chicken on Accident
Note 1: I tried to make whipped cream, but accidentally overwhipped it into butter & buttermilk 🤣... Since I have bread, why not make butter chicken for brunch. It is loosely inspired from an Indian recipe. I accidentally churned butter from 200ml whipping cream.
Note 2: Heat the butter with 1 tbsp cooking oil to avoid burnt butter.
Note 3: This butter chicken is a little sour. You can adjust if you like, but I like it sour. Since it is quite acidic, be careful not to introduce too much cream or dairy based ingredients into it as it may curdle & become bitter.
Ingredients
Part A - Spice Mix
2 buah keras
4-5 cardamom
2 cloves
Coriander seeds
Cumin seeds
Fennel seeds
Fenugreek seeds
Black peppercorns
Part B - Butter Chicken
Accidental butter
1 tbsp carotena oil
1 star anise
1 tbsp garlic & ginger paste
1/2 tbsp chili flakes / powder
1 tbsp spice mix
Coriander leaves root
1 bay leaf
1 medium red onion, sliced thinly
1 medium tomato, diced
100gm tomato paste
4 aloo bukhara (dried plum)
1/3 lemon, juiced
1/2 tsp salt
1/2 tbsp sugar
150gm - 200gm boneless chicken, cubed
Accidental buttermilk
Steps
Part A - Spice Mix
1. Toast the spices without oil until fragrant. Pound in mortar & pestle until fine. Set aside.
Part B - Butter Chicken
1. Heat butter with oil (do not put in buttermilk yet). Might take a while to turn into clarified butter especially if you did not strain the butter away from its buttermilk beforehand.
2. Once turned into clarified butter, add in star anise and sautee until fragrant.
3. Add in ginger & garlic paste and chili flakes. Sautee until blooming and fragrant.
4. Add in sliced red onion, coriander root, and spice mix. Stir until wilted and fragrant.
5. Add in diced tomato. Sautee until tomato softened into a paste.
6. Add in tomato paste, bay leaf, aloo bukhara, lemon juice, salt and sugar. Simmer for a while until gravy is thickened.
7. Add in boneless chicken cubes. Stir for a while until cooked (but not overcooked as it will turn dry).
8. Add in the rest of the buttermilk and stir to incorporate. Immediately turn off and remove from heat. Residual heat shall continue cooking and warming the food.
9. Serve warm with warm bread, leavened or unleavened.
