Lazy Muffin (Blueberry, Chocolate)

A. Blueberry Muffin
Note 1 : Inspired by


1/2 cup (115gm) butter
1/2 cup (100gm) sugar
1/2 cup (120gm) milk
1/8 cup (30gm) lemon juice
1/4 tsp fine salt
1/2 cap vanilla essence
2 eggs
2 cups (240gm) flour
2 tsp baking powder
1 tbsp poppy seeds
2 1/4 cups (330-350gm) fresh blueberries

170°C for 30 minutes, uncovered fan top bottom heat


B. Chocolate Muffin (Super Lazy)

1/2 cup (125gm) butter >> a little too dry, perhaps to add another 30gm canola oil?
1/2 cup (125gm) fine sugar >> not too sweet  perhaps to add another 30gm?
1/2 cap vanilla essence
3 whole eggs
1/4 cup (60gm) full cream milk

2 cups (250gm) flour (220gm all purpose flour, 30gm corn starch)
1/4 cup (30gm) cocoa powder
1/4 tsp baking soda
1 tsp baking powder

100gm chocolate chip

5cm base muffin cup (yield ard 20 cups)
160°C fan, uncovered, 20 minutes.
Produce a nice cracked top 👍🏻👍🏻
