Lazy Kuih Raya (Tart Nenas, Cornflakes)
A. Tart Nenas
A drop of yellow colour I didn't use colouring

Makes 56-60 tart nenas gemok
230gm butter
3 tbsp (60gm) condensed milk
2 tbsp (30gm) ghee
1 whole egg (30gm) (remain saved for brush)
A drop of vanilla essence
3 1/4 cup (390gm) all purpose flour
2 tbsp (18gm) custard flour
2 tbsp (15gm) corn flour
Filling :
Around 500gm - 750gm jem nenas
(Sebaiknya pilih yang ada nenas dan gula shj)
Brush :
Egg (add milk if insufficient)
Shape the jem nenas with hands wet with water. Store in fridge until further use.
Bake in 160°C for 25 minutes.
Dust the pan with flour before tarting.
B. Biskut Cornflakes
250gm butter atau Planta (Pelangi)
1 cawan (130gm) gula aising (gula castor)
+1 biji telur >> to consider adding 2 eggs for a more crunchy cookie, less floury taste
1 tsp vanilla essence
3/4 cawan (90gm) tepung jagung
2 cawan (240gm) tepung gandum
+2 tbsp (20gm) nestum
+2 tbsp (20gm) susu tepung
+1/2 tsp baking powder
4 cawan (120gm) cornflakes, diramas >> 3 cawan masuk dough, 1 cawan untuk roll dough balls
+50gm dried cranberries, soaked and chopped
170°C fan for 30 minutes (or until golden)
I feel the heat is a little bit lacking in kampung oven. Perhaps to increase to 180°C.. or to try use Kita Mekar oven.. Cookie is a little too floury to my taste.
XXX. Kerepek Bawang

2 biji (500gm) bawang merah besar
1 ulas (5gm) bawang putih
1 1/4 cawan (170gm) tepung gandum
1 tbsp (10gm) tepung beras
1 tbsp (8gm) udang kering
1/2 tsp chicken stock powder
1 1/2 cawan (187.5gm) tepung gandum
1 tbsp (10gm) tepung beras
80gm marjerin
1/2 tsp garam halus
Air secukupnya (???gm)
1. Uli doh asing-asing.
2. Canai rata dan gulung bersama.
3. Balut dengan plastic wrap dan sejukkan dalam fridge semalaman.
4. Slice thinly using mandolin into the frying wok.
